It’s week two of my attempt to cook meals on Sunday that will last the week. Last week R and I did three big dishes because we didn’t have many evening plans. This week we have my good friend coming to town, and lots of dinner plans so we went with one big dish and two small snacky items to have in stock while she’s visiting. Enjoy!
Meals for the Week: 6/28 Edition
Coconut Chana Saag ala Isa Does It (we cook a ton from this book. Great primer for the vegan or trying-out-vegan chef)
We add in brown rice to the dish as the final step then warm through. It makes for more of a meal.
Quinoa Tabbouleh from Epicurious
Unlike regular tabbouleh this is hearty enough to eat as a side salad or on top of arugula as a full meal. We added in some feta because cheese makes everything better.
Olive Tapenade from Olivia Jamie
I threw a little of the extra feta into this as well because of course. This is made for heaping onto pita chips.
